Segmenting an Orange

Orange “segments” are pretty much just that…small segments of the orange flesh that have been removed from the pith and peel.  Segments are a great way to incorporate cirtus into dishes such as salads, salsas, and desserts.

First, cut off the top and bottom of the orange, creating a level base for the orange to sit.  (This is always a good idea when cutting any circular fruit or vegetable.  Make an small initial cut to level the item, this way it is more stable and you are less likely to cut yourself)

With your knive at an angle, remove the peal and pith, cutting an arch downwards.  You want to remove all the white pith, so you only see the flesh of the fruit.  The pith is what makes cirtus bitter, so removing it completely will not only look better, but ensure the sweetest fruit possible.

Work in small segments, turning the orange to make each additinal cut.  Continue to cut around the orange until no peel remains.

Holding the orange in your hand, and working over a bowl to catch the juices, make a small cut on either side of the membrane.

With both cuts, you should create a “V” shape, and the segment will pop out.

Continue, working your way around the orange to cut each segment out, then squeeze the remaining membrane to release all the juices.
